You know those homemade treats from your childhood that were something so simple, but everything your young, non-fancy, non-foodie taste buds could ever want? Like that gooey, fresh rice krispy treat… so easy but so deliciously sugary?
These cookie were… well actually, they weren’t one of those treats for me.
The first time I ever had these was when my friend Joe asked me to make them. They were his childhood treat and I had no idea what they were and had to look them up on the internet.
Oats, chocolate, peanut butter… Yeah.. I could be happy eating these. definitely.
And just one pot?
I could be happy making them too.
When I brought them into work, I learned that I was apparently one of very few people who didn’t recognize them from their childhood. In my defense, they have peanut butter in them and my brother is deathly allergic.
But whatever, I still had fun bringing those childhood smiles to others, if not myself. And I was smiling too, just in a different, chocolatey way as opposed to nostalgic.
No-Bake Chocolate Oatmeal Cookies
Recipe is the combination of many different ones Joe gave the “I recognize that!” to.
- 1/2 cup butter
- 2 cups sugar
- 1/2 cup milk
- 1/4 cup cocoa
- 1/2 cup peanut butter
- 3 cups dry quick-cooking oats
- 2 teaspoons vanilla
Combine butter, sugar, milk and cocoa in a pot and bring to a rolling boil. Boil for 1 minute, stirring occasionally.
Remove from heat and stir in peanut butter, oats and vanilla.
Drop by rounded tablespoons onto wax paper. Allow to cool for at least 1 hour. Store in air-tight container.
